Backups are the most reliable way to restore deleted conversations.
Check the backup date
The backup only saves what existed when it was made. If the message was deleted afterward, it's still there.
Restoring replaces all current history with that from the backup. Export any recent conversations that matter first.
Go to Settings > Chats > Chat backup. Note the date and the account used.
On the same screen, the Include videos option shows whether they will also be returning.
On Android, via Google Drive
Keep the same Google account on your phone where the backup was saved.
Remove the app and reinstall it from Google Play.
Enter the previous number and the code you received. This code is unique to you.
Leave your phone plugged into Wi-Fi and charging until the conversations appear.
On iPhone, via iCloud
Use the same Apple ID and leave iCloud Drive enabled.
Delete WhatsApp and reinstall it.
The option appears after confirming the number. Please wait with your iPhone plugged in.
If there is no backup
Without a backup, there is no reliable method to recover the text.
Ask the other person to resend or export the conversation.
However, the photos and videos from the conversation can remain in the phone's media folder.
